Mashed Potatoes and Celery Root with Horseradish

Dec 7, 2017

I love mashed potatoes – everyone loves mashed potatoes, right? This is my favorite little upgrade to the classic. The celery root has an earthy flavor and the horseradish makes it pair perfectly with steak or roast beef.

When you’re checking to see if the vegetables are ready to mash, poke at one of the chunks of celery root…it takes a bit longer to cook than the potato.

Mashed Potatoes and Celery Root with Horseradish

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Serving Size: 4 servings

1 lb celery root, peeled & cubed
1 lb, 4.5 oz yellow potatoes, peeled & cubed
2 T. butter
1/2 c. milk (2% or whole)
2 T. prepared horseradish
salt & pepper
chopped fresh chives

Bring a large pot of salted water to a boil, then add potatoes and celery root. Cook for about 30 minutes, or until they mash easily with a fork.

Drain the potato-celery root mixture, then add the rest of the ingredients and mash until they're as creamy as you like them.
